Cucumber Grape Salad

Serves 6. It will work for a fancy dinner party or can be enjoyed with a sandwich at lunch.

6 cups (about 2 medium) peeled and thinly sliced cucumbers

2 cups seedless grapes, whole or halved

1/4 cup chopped chives or green onions

1⁄ 3 cup white wine vinegar

1 tsp. olive oil

1 tbl. honey

1 tsp. salt

1/4 tsp. bottled hot pepper sauce

1. Combine cucumber slices, grapes and chives.

2. Mix vinegar, olive oil, honey, salt and hot sauce. Add to grape mixture and mix well. Refrigerate at least 30 minutes.

Nutritional analysis per serving: 1.1 grams protein, 1.2 grams fat, 15.6 grams carbohydrate, 0 milligrams cholesterol, 1.5 grams fiber and 392 milligrams sodium.
