Corinne Cook| Special to Food Aug. 28, 2013 Comments While peaches are at their peak, make Peach and Strawberry Salad With Fresh Peach Vinaigrette. The salad is a combination of peach slices, strawberry halves, toasted nuts, lettuce, green onions and blue cheese. Its dressing consists of puré ed peach, lemon juice, honey, oil and vinegar. Summer salads colorful and tasty with a mix of seasonal fresh fruit are a nice change from the usual green salads. Everyone I served this to, even the younger ones, liked the salad combination. I peeled and shaved a small cucumber with a vegetable peeler and placed the ribbons on the side of the salad instead of in it. Corinne Cook is a columnist for The Advocate.
