Crawfish Corn Soup

Serves 8 to 10. Recipe is by Jeffrey Serrett.

2 lbs. peeled crawfish

2 (14-oz.) cans low-sodium cream corn

2 (14-oz.) cans cream of potato soup

2 (12-oz.) cans low-fat evaporated milk

1 (10-oz.) can Ro-tel tomatoes, optional

Green onions, chopped, for garnish

1. Mix all ingredients in slow cooker. Cook 6 to 8 hours on Low or 4 hours on High.

2. Serve. Add chopped green onions for garnish.
