Fresh Mozzarella Salad


Fresh Mozzarella Salad

Makes 8 cups. Recipe is from Lindsay Olives.

1 lb. small fresh mozzarella cheese balls, well-drained (The ones I purchased were a little larger so I cut them in half.)

1 (6.5-oz.) container Lindsay Italian Reclosable Seasoned Olives, drained

1 small (pickling) cucumber, thinly sliced (1 cup)

1 (12-oz.) pkg. grape tomatoes

¼ cup finely chopped red onions

10 fresh large basil leaves, thinly sliced

¼ cup extra virgin olive oil

Salt to taste, optional

Freshly ground black pepper

1. In large bowl, combine all ingredients except pepper; mix well. Serve immediately or cover and chill up to 1 hour.

2. Serve with fresh pepper if desired.
