Hanley’s Strawberry, Blue Cheese and Bacon Salad
Serves 4 to 6. Recipe is from Richard Hanley Jr.
4 bacon strips
4 cups fresh baby spinach
2 cups sliced Louisiana strawberries
1 avocado, sliced
1 cup blue cheese crumbles (or feta)
1 cup sliced almonds
4 tbls. Hanley’s Strawberry Vinaigrette
1. Place bacon strips on large skillet on medium-high heat and cook 4 minutes on each side. Crumble bacon.
2. Place the baby spinach in a large bowl. Add strawberries and avocado.
3. Spread blue cheese, bacon and almonds over the salad. Drizzle vinaigrette over salad. Toss.
