It’s good to remember that even though slow cooking is easy and not exactly gourmet, it doesn’t have to look, well, like mush on a plate.

There are lots of ways to make a simple dish look fancy. Meat or poultry cutlets are some of my favorite ingredients with which to start.

Pick a great filling, one that appeals to you, and roll-up inside the cutlets or flattened meat. Tie or wrap with bacon, fasten with toothpicks and turn a plain dinner into a dish that pops.

Find a sauce that makes a nice glaze or a good companion flavor. Take your time in the grocery-store aisles. I found a nice Classico Roasted Red Pepper Alfredo sauce that sounded like the perfect accent for my cutlets.

Then look for color as the finishing touch. It might be as simple as a couple of freshly cooked asparagus spears delicately crossed on top or colorful rice surrounding the main entrée.
