Gourmet Galley: Eggs Benedict Casserole Gourmet Galley: Eggs Benedict Casserole Corinne Cook May 08, 2013 Comments Now that the weather is pleasant, think about serving Eggs Benedict Casserole for Saturday or Sunday bunch and eating on the patio. This simple French bread-and-egg dish can be put together in just a few minutes. Don’t tell, but the warm hollandaise is made from a mix and it gets jazzed up with Tabasco, a perfect pairing for eggs. Serve your favorite fresh fruit, such as strawberries, blueberries, raspberries or cantaloupe, in a big bowl topped with a splash of orange juice, grated orange peel and a little honey to sweeten the dish. Or, instead of adding honey, stir in a little vanilla yogurt and a sprinkle of cinnamon. Corinne Cook is a columnist for The Advocate. Reach her at email@example.com.
