The Elvis

Makes 2 sandwiches. Recipe is by Cynthia Nobles, who gives Elvis Presley’s favorite peanut butter and banana sandwich a Louisiana twist with the addition of Steen’s Syrup. Some food historians claim Elvis liked the banana smashed and that he preferred the sandwich fried in bacon fat.

1 large ripe banana, sliced

4 slices white bread

4 tbls. creamy peanut butter

1 tbl. Steen’s Syrup

4 slices thick-cut bacon, fried crisp

4 tbls. unsalted butter

1. Layer bananas on 2 slices of bread. In a small bowl, stir together peanut butter and syrup. Spread peanut butter mixture on remaining 2 bread slices.

2. Put 2 slices bacon on top of each slice of bread with bananas. Top with peanut butter bread slices.

3. Melt butter in a heavy skillet on medium-high heat. Fry sandwiches on both sides until golden brown. Serve immediately.
