Baked Acorn Squash

Baked Acorn Squash

Serves 2 to 3. Recipe is by Beth Colvin.

1 acorn squash

Water

2 tbls. butter

Dash cinnamon, or to taste

1. Preheat oven to 350 degrees. Rinse the acorn squash and cut in half lengthways. Scoop out the seeds and discard.

2. Put about an inch of water in a shallow baking dish. Put the squash, cut side down, into the water.

3. Bake squash for 30 minutes or until soft and scoopable. Serve in shells or scoop out and season with butter and cinnamon.
