Mushroom and Swiss Grilled Cheese

Makes 1 sandwich. Recipe is by Beth Colvin. This sandwich can be dressed up with some rotisserie chicken and a fancy mustard, or caramelized onions, or some thin-sliced roast beef. Use your imagination.

2 tsps. butter or margarine, divided

4 to 6 baby bella mushrooms, washed and sliced

Pinch of salt

White pepper, to taste

Pretzel roll, sliced in half

2 deli slices of Swiss cheese

1. Preheat oven to 400 degrees. Place an oven-safe cooling rack on a baking sheet.

2. Heat 1 teaspoon of butter in a sauté pan over medium heat. Add the mushrooms, salt and pepper and sauté until the mushrooms are tender, adding the last teaspoon of butter at the end.

3. Put the bottom half of the pretzel roll, crust side down, on the baking rack. Top with one slice of Swiss cheese and the mushrooms. Add the second slice of cheese and top with the top of the roll.

4. Bake at 400 degrees for 6 to 8 minutes. Remove from the oven. Serve immediately.
