It has made the circuit from friends in Mississippi to Alabama. One of them, Kay Winpigler, traveled with the dish cooking in her slow cooker, via an adaptor plugged into her car. It was a big hit, she said, with her daughter and son-in-law when she arrived hours later. She had forgotten to turn the cooker back on when she stopped for gas and had to finish cooking in the microwave upon arrival, she said. While I had to admire Winpigler’s cooking spirit and determination, slow-cooking manufacturers say it is never safe to travel with a cooking slow cooker. Cookers should always be on a level surface to begin with and could easily overturn in a traveling car. They also question whether foods can reach a food-safe temperature plugged to a car adaptor. That being said, the recipe itself is certainly a good one and if you’ve got a freezer stocked with those boneless, skinless chicken breasts, this is a good recipe for them. I had several packages of chicken tenders found on a recent sale so that is what I used. The recipe is also a good reminder of the spirit of friendship among cooks.
