Salmon Patties

Makes 9 servings. Recipe is from the Missouri Nutrition Network.

1 (15.5-oz.) can salmon, drained

1 cup whole-grain cereal or crackers, crushed

2 eggs, lightly beaten

1/2 cup 1 percent milk

1⁄8 tsp. black pepper

1 tbl. vegetable oil

1. Using fingers or a fork, flake salmon until very fine. Crumble cereal or crackers and add to salmon with eggs, milk and pepper. Mix thoroughly.

2. Shape into 9 patties. Heat oil in a skillet and carefully brown both sides until patty is thoroughly cooked.
