Recipe is by Julie Kay.1 (1-lb.) pkg. dried white beans8 cups water6 cups vegetable broth1 (14.5-oz.) can stewed tomatoes1 tsp. Creole seasoning4 cloves garlic, minced1 onion, chopped3 stalks celery, chopped1 link andouille sausage, cut into small pieces1 lb. shrimp, peeled and uncooked1. Put white beans and water in large pot and soak overnight.2. Drain beans and place beans in 5- to 6-quart slow cooker.3. Add vegetable broth, stewed tomatoes, Creole seasoning, garlic, onion, celery and sausage. Cook all on Low for 7 hours.4. Add shrimp and turn cooker to High. Continue cooking for an additional hour or until shrimp turn pink.
