Daydream Dessert

Serves 4. Recipe is by Julie Kay.

2 apples of choice, chopped

½ cup coconut

¼ cup almonds

4 tbls. butter, melted

¼ cup brown sugar

Vanilla ice cream

Individual sponge cakes

1. Put apples, coconut and almonds into slow cooker. Mix together melted butter and brown sugar.

2. Pour butter and sugar over apples, coconut and almonds.

3. Cook on Low for 2 hours.

4. Place a spoonful of ice cream into each sponge cake and quickly top with slow-cooked mixture. Serve immediately.
