Perfect Fried Oysters

Makes 2 dozen. Recipe is by Cynthia Nobles.

2 doz. oysters, shucked

1 large egg, beaten

1 cup buttermilk

1 tsp. salt

½ tsp. ground black pepper

¼ tsp. cayenne pepper

½ tsp. garlic powder

1 tbl. Creole seasoning

2 cups finely ground cornmeal

½ cup cornstarch

Peanut oil for frying

1. Pat oysters dry and refrigerate until ready to cook.

2. In a shallow medium bowl, beat together egg, buttermilk, salt, black pepper, cayenne and garlic powder. In another bowl, stir together Creole seasoning, cornmeal and cornstarch.

3. In a large heavy pot or skillet, heat 2 inches oil to 375 degrees. Dredge oysters in buttermilk mixture and then in cornmeal. Drop into hot oil, making sure they do not touch. Fry, turning once, until oysters float and are golden and crusty, about 4 to 5 minutes.
