Hungarian Mushroom Soup

Serves 6. Recipe is from http://www.allrecipes.com.

4 tbls. unsalted butter

2 cups chopped onions

1 lb. sliced fresh mushrooms

2 tsps. dried dill

1 tbl. paprika

1 tbl. soy sauce

2 cups chicken broth

1 cup milk

3 tbls. flour

1 tsp. salt

Black pepper, to taste

2 tsps. lemon juice

1/4 cup chopped fresh parsley

1/2 cup sour cream

1. Melt the butter in a large pot over medium heat. Sauté the onions for about 5 minutes, then add the mushrooms and cook for 5 more minutes. Stir in the dill, paprika, soy sauce and broth. Reduce heat to low, cover and simmer 15 minutes.

2. In a separate bowl, whisk milk and flour together. Pour into the soup and stir well to blend. Cover and simmer 15 minutes, stirring occasionally.

3. Stir in the salt, pepper, lemon juice, parsley and sour cream. Heat 3 to 5 minutes until heated through, but do not boil.
