Chicken Salad
Serves 4 to 6. Recipe is from Margarita Wetzel.
1/4 cup parsley
Juice of 1 lemon
1⁄3 cup mayonnaise
1/4 tsp. salt
1/4 tsp. black pepper
4 to 5 cups cooked, shredded chicken
1⁄3 cup onion, finely chopped
2 large tomatoes, chopped
1. Place parsley in a food processor. Add lemon juice, mayonnaise, salt and pepper and process until smooth.
2. Mix chicken, onion and tomatoes in a bowl. Add the dressing and mix well.
