Harriet Babin Miller reminded me about this quick and delicious potato dish. She said this comes in handy when time is short and you have to get a meal on the table. It takes only three ingredients.

This is so easy and the recipe is no big secret; in fact, it’s on the box of Lipton dry onion soup mix. Potatoes are scrubbed clean, cut into chunks, placed on a baking sheet and tossed with oil, dry mix and then baked. Don’t add salt to the potatoes; the dry mix is salty. When I tested the recipe, I used slightly less oil than that called for, and I partially peeled the potatoes but peeling is not necessary.
