Cube steak is one of those inexpensive meat choices that benefits both the budget and the taste buds.

Even if you have a small household, look for a sale on family packs of steak. Freeze what you don’t use.

The price break can be well worth it. The same can be said for bulk packages of pork chops and chicken — depending on available freezer storage.

For cube steaks, add a generous amount of sliced onions and a late smattering of blue cheese. That’s when the flavor pops. As for gravy, use any favorite. While I used Tony Chachere’s gravy, it will taste great with just about any choice. Serve over any variety of rice.

For testing purposes, I used the yellow rice, which also provided a touch of color.
