Sweet Potato Bread Pudding

Serves 10. Recipe is from chef Chris Wadsworth, of Restaurant IPO.

5 sweet potatoes

8 loaves po-boy bread, cut into cubes

1/2 cup butter

8 eggs, beaten

1 cup white sugar

1 cup brown sugar

2 tsps. vanilla extract

1/2 tsp. salt

3 cups scalded milk

1. Preheat oven to 375 degrees. Lightly butter a 2-quart baking dish.

2. Peel sweet potatoes and cut into 1-inch pieces. Boil on stove until tender. Drain and smash.

3. Combine bread cubes, butter and sweet potatoes. Mix well and place in a greased baking dish.

4. Beat together eggs, sugars, vanilla and salt. Add milk, mix well and pour over bread cubes. Bake for 25 minutes.
