Apple and Leek Salad

Serves 6 to 8. Recipe is from Hanna Zaruski. The salad “is also delicious with pieces of raw or toasted walnuts,” she says.

2 slim leeks, white part only, washed thoroughly

2 large apples (medium sweetish)

1 tbl. minced parsley

Juice of one lemon

1 tbl. honey

1 tbl. neutral oil (I like grapeseed oil for no-lettuce salads)

Salt and freshly ground pepper, to taste

1. Thinly slice the leeks, using only the white part. Peel and core the apples, then slice thinly.

2. Toss all the ingredients except salt and pepper in a large serving bowl. Season to taste.

3. Let stand in a cool place for about an hour to allow flavors to blend well.
