Cucumber Salad (Mizeria)

Serves 6 to 8. Recipe is from Hanna Zaruski. She said, “The old-fashioned Polish recipe also asks for sugar, but it’s truly not necessary!”

3 medium cucumbers, peeled and sliced

½ tsp. salt

1 red onion, chopped

Juice of one lemon

½ cup sour cream (or Greek yogurt)

1 tbl. chopped fresh dill

Lots of freshly ground black pepper

Additional chopped dill or chives, for garnish

1. Peel the cucumbers and slice thinly. Place them in a bowl and sprinkle salt over them. Add chopped red onion, lemon and rest of the ingredients. Mix well and season to taste.

2. Let stand in a cool place for about an hour to allow flavors to blend together. Serve with chopped dill or chives or both on top.
