Irish Beef Stew

Serves 6 to 8. Recipe is by Phil Brady.

4 lbs. stew beef

6 onions, 3 diced and 3 chopped

2 cups chopped celery

8 cloves of garlic, minced or chopped

1 bottle Guinness stout

2 (16-oz.) cans stewed tomatoes

Water or beef stock

12 carrots, chopped

8 potatoes, chopped

2 tbls. honey

Salt and pepper to taste

1. Brown beef and remove from pan. Sauté diced onions with celery and half the garlic.

2. Deglaze the bottom of the pot with Guinness. Return to the pot and add tomatoes. Add water or beef stock to cover the meat. Bring to a boil and simmer 11/2 or 2 hours until meat is tender.

3. Add the carrots, potatoes, remaining onions, garlic and honey. Add the salt and pepper to taste. Cook until the vegetables are tender.
