Chef Justin Timineri’s Spicy Florida Blueberry Barbecue Sauce
Serves 6. Recipe is from chef Justin Timineri of the Florida Department of Agriculture and Consumer Services.
2 tsps. vegetable oil
1/4 cup minced onion
1 tbl. minced jalapeño, seeded
2 cups fresh blueberries
1/4 cup ketchup
1/4 cup rice wine vinegar
3 tbls. light brown sugar
3 tbls. Dijon mustard
1 tsp. hot sauce
Salt and black pepper, to taste
1. In a nonreactive saucepan, heat oil over medium-high heat. Add the onion and jalapeño, then cook about 3 minutes or until vegetables are wilted, stirring often.
2. Add blueberries, ketchup, vinegar, sugar, mustard and hot sauce. Bring mixture to a simmer, reduce heat to low and cook about 10 minutes or until sauce is thickened, stirring occasionally.
3. Carefully transfer sauce to a blender or food processor and purée until smooth. Pass through a fine strainer or sieve. Season to taste with salt and pepper. Serve at room temperature.
