ADVOCATE-TESTED RECIPE

Shrimp and Okra Spaghetti

Serves 6 to 8. Recipe is by Julie Kay.

3 stalks celery, chopped

1 large onion, chopped

1 green bell pepper, chopped

1 (28-oz.) can diced tomatoes

1 (8-oz.) can tomato sauce

1 (6-oz.) can tomato paste

¾ cup water

2 cups chopped okra

1 tbl. black pepper

1 tsp. Italian seasoning

1 tsp. oregano

1 lb. uncooked shrimp

Spaghetti pasta, cooked

Grated or shredded Parmesan cheese, optional

1. Place all ingredients except shrimp and spaghetti noodles into slow cooker.

2. Cook for 6 hours and add in shrimp, stirring well into mixture. Turn cooker to High and cook for an additional hour or until shrimp are pink.

3. Ladle over cooked spaghetti and serve. Sprinkle Parmesan cheese over serving, if desired.
