Recipe created by Kristine Snyder from Kihei, Maui, Hawaii.For the burgers:1¼ lbs. ground chicken2⁄ 3 cup Panko (Japanese bread crumbs)1 egg, lightly beaten2 green onions, thinly sliced3 tbls. chopped cilantro1 clove garlic, minced1 tsp. Asian hot chili sauce1 tsp. salt1 tbl. vegetable oil½ cup bottled teriyaki glaze4 tsps. honey4 sesame buns, split and toasted4 leaves red lettuce1 cucumber, peeled, seeded, halved and thinly sliced lengthwise1. In large bowl, mix together chicken, Panko, egg, onions, cilantro, garlic, chili sauce and salt.2. With oiled hands, form into four patties.3. In small bowl, mix together teriyaki glaze and honey. Set aside.4. In large nonstick skillet, over medium-high heat, place oil. Add chicken and cook, turning and brushing with teriyaki glaze, about 10 minutes or until done.5. Place burgers on toasted buns and top with lettuce, cucumber and Ginger Mayonnaise. Garnish with additional cilantro and cucumber slices.For the Ginger Mayonnaise:½ cup mayonnaise2 tsps. sweet pickle relish2 tsps. minced fresh ginger2 tsps. fresh lime juice1 clove garlic, minced¼ tsp. saltCilantro sprigs, for garnishMix all ingredients together in small bowl.
