Chipotle Chicken Mango Salad

Serves 2 as an entrée, 4 as a side. Recipe is from Boar’s Head.

4 cups iceberg lettuce, shredded

6 ozs. Boar’s Head Chipotle Chicken, sliced 1/4-inch thick and diced

6 ozs. pepper jack cheese, sliced 1/4-inch thick and diced

1 cup mango, diced

1/2 cup mango chutney with jalapeños

1/2 cup mayonnaise

1/2 cup sour cream

1 tbls. fresh lemon juice

1/2 cup almonds, sliced

1. Toss the lettuce, chicken, cheese and mango in a bowl. Set aside.

2. In a separate bowl, whisk together mango chutney, mayonnaise, sour cream and lemon juice to make a dressing.

3. Toss the chicken salad with dressing. Garnish with sliced almonds and serve.
