Advocate-Tested Recipe

Smothered Squash

Serves 6 to 8 as a side dish. Recipe is by Beth Colvin.

5 strips bacon, chopped

2 medium sweet onions, diced

4 to 6 large yellow crookneck squash, chopped

Salt and pepper, to taste

1. In a large saucepan over medium-high heat, cook the bacon until crispy. Remove the bacon with a slotted spoon and reserve for another recipe.

2. Lower the heat and add the onions, cooking until onions are translucent. Stir occasionally to ensure even cooking.

3. Add the squash and season with salt and pepper. Stir to coat the squash well in the fat and to distribute the onions. Cover and continue cooking over low heat for 20 to 30 minutes or until squash is tender.
