Green Beans With Toasted Pecan Dressing
Makes 8 servings. Recipe is from “Lights Over Carolina” by The Junior League of Anderson County in South Carolina. “This dish is so versatile. It is wonderful as a cold side dish at a barbecue, or as an elegant accompaniment at a formal dinner.”
2 lbs. fresh green beans
½ cup chopped green onions
1⁄ 3 cup olive oil
¼ cup cider vinegar
1 tsp. dried dill weed
¾ tsp. salt
½ tsp. black pepper, or to taste
¾ cup chopped pecans, toasted
1. Place green beans into large pot of boiling water and cook for 10 minutes. Drain and place into serving bowl.
2. Combine onions, oil, vinegar, dill, salt and pepper. Pour over beans.
3. Sprinkle with nuts.
