Gourmet Meatloaf a la Lillian

Serves 4 to 6. Recipe is from Lillian Robertson.

1 (3-lb.) can processed luncheon meat

1 onion, chopped

1 bell pepper, chopped

Garlic, diced, to taste

1 egg

Sauce:

1 cup ketchup

1 tbl. mustard

2 tbls. brown sugar

1. Put the meat in a pot of boiling water. Simmer for 30 minutes, then drain and mash with a fork.

2. Stir in chopped onion, bell pepper, garlic and an egg. Put the meat in a meatloaf pan and bake at 350 degrees for 30 to 40 minutes.

3. Mix together the sauce ingredients. Remove the meatloaf from the oven and top with sauce.
