MeMi’s Prune Cake

Makes 1 (9x13-inch) cake. Recipe is from Olivia Elkins Dunn.

11/2 cup sugar

1 cup vegetable oil

1 cup buttermilk

3 eggs

1 tsp. vanilla

21/2 cups all-purpose flour

1 tsp. salt

1 tsp. cinnamon

1 tsp. allspice

1 tsp. nutmeg

1 tsp. baking powder

1 cup pitted prunes, cooked until mushy and finely chopped

1 cup chopped pecans

Topping:

1/2 cup buttermilk

2 tbl. margarine

1 cup sugar

1/2 tsp. baking soda

1. Preheat oven to 350 degrees.

2. Cream sugar and oil, then add buttermilk, eggs and vanilla. Mix thoroughly.

3. Add dry ingredients, prunes and pecans. Blend well. Pour into a well-greased and floured 9x13-inch baking pan. Bake for 35 minutes.

4. For the topping, mix all the ingredients in a small saucepan and cook to soft-ball stage. Pour over the cake while still hot.
