Demitasse of Sweet Pea Soup

1 tbl. butter
¼ cup chopped onion
1 (12-oz.) bag frozen baby sweet peas (I used Pictsweet brand), thawed
2 cups half-and-half OR 1 cup chicken broth and 1 cup half-and-half
Salt and pepper, to taste
Garnish of fresh dill, basil or mint
Sour cream, optional
Crumbled bacon or bacon bits, optional
1. Place butter and chopped onion in 2-cup glass measuring cup or small bowl suitable for microwaving. Heat on high for about 2 to 3 minutes or until onions are soft. Remove and set aside.
2. Puré e thawed peas in food processor. Transfer peas to 2-quart saucepan and add cooked onions, half-and-half or broth. Lightly season with salt and pepper.
3. Simmer over medium heat for about 5 minutes. Add a pinch of whichever herb you are garnishing with to the soup. Purée again with submersible blender if you want it smoother.
4. Ladle into demitasse cups and garnish with chopped basil or mint or a fine sprig of dill. If you wish, add a small dollop of sour cream sprinkled with crumbled bacon or bacon bits.
Note: If you don’t have fresh dill, you can use the dried.
