Chicken Tacos With Cucumber Salsa
Makes 6 servings. Recipe is from Ortega.
2 tbls. canola oil
1/2 red onion, chopped
1/2 tsp. red pepper flakes
1/2 (1.25-ounce packet) low-sodium chili seasoning mix
2 chicken thighs, shredded
1 cucumber, chopped
1/2 (15-oz.) can chopped tomatoes, drained
3 tbls. taco sauce, divided
1 tbl. chopped fresh cilantro
8 taco shells
2 tbls. sour cream
Kosher salt, to taste
Black pepper, to taste
1. In a skillet over medium heat, add oil. Sauté half the onion, red pepper flakes and reduced-sodium chili seasoning mix until the onions are soft, about 5 minutes. Add chicken and cook until warmed through, about 5 minutes.
2. To make the salsa, mix together cucumber, tomatoes, 2 tablespoons taco sauce, remaining onion, cilantro and salt and pepper to taste.
3. Spoon the chicken mixture into taco shells, top with salsa and your choice of taco toppings. Mix remaining tablespoon of taco sauce into sour cream and top.
