Apple Pie

Makes 1 (9-inch) pie. Recipe is from King Arthur Flour.

8 cups, or about 3 lbs. of sliced Golden Delicious, Gala and Granny Smith apples

2 tbls. lemon juice

1/2 to 3/4 cup sugar

1/4 cup unbleached all-purpose flour

1 tsp. cinnamon or 1/4 to 1/2 tsp. Saigon cinnamon

1/4 tsp. nutmeg, optional

1/4 tsp. allspice, optional

2 tbls. to 1/4 cup boiled cider, optional

2 tbls. butter, diced in small pieces, optional

Unbaked 9-inch pie crust

1. Preheat the oven to 425 degrees. Combine the sliced apples and lemon juice in a large mixing bowl.

2. In a small bowl, whisk together the sugar, flour and spices. Sprinkle the mixture over the apples, and stir to coat them. Stir in the boiled cider, if using.

3. Place the pie pan on a baking sheet lined with parchment paper. Spoon the apple filling into a prepared but unbaked pie crust. Dot the top with the diced butter, then top with the other crust with holes cut for vents. Pinch the crusts together.

4. Bake for 20 minutes at 425, then reduce oven temperature to 375 and cook for 40 minutes or until the filling is bubbling.
