Canned Carrots

Serves 4-6. Recipe is from Marion Sommers, who doesn’t like to chop carrots because when she was in high school, she was helping a neighbor chop carrots and ended up with stitches.

11/2 (14.5-oz.) can of carrots, with liquid

1/2 of an onion, chopped

1 tbl. olive oil

1 tbl. herb and garlic seasoning

Pour carrots and liquid into a pot, then add the onion, oil and seasoning. Cook over medium heat for 30 minutes.
