Simple Eggplant
Serves 6. Recipe is from Dr. James Hannie.
2 long eggplants
2 tsps. garlic powder
2 to 3 tbls. regular olive oil
Juice of 1 large lemon
1. Trim skin off eggplant; split vegetable vertically in half and then into plump 3-inch portions. Sprinkle eggplant with garlic powder.
2. Heat olive oil in pan and sauté eggplants until thoroughly browned. The eggplant will absorb olive oil as it cooks. Sprinkle with lemon juice and serve immediately.
