Fresh Ideas: Colorful produce is good for you

Foods rich in colors are inherently good for you. Rich in vitamins A, C and natural nutrients, red and yellow peppers make for a beautiful body.

And summer Louisiana produce couldn’t be more beautiful. Local markets are filled with brightly colored peppers, tomatoes and oversized bunches of basil. With such rich natural resources, it’s difficult to resist a lovely appetizer like this Sweet Bell Pepper Bruschetta.

Toss peppers with ripe cherry tomatoes, basil and a dressing of olive oil and lemon juice and serve bruschetta over hardy, toasted whole-wheat bread. This red and yellow bruschetta is low fat and clearly delicious.

Who knew taking care of your body looked — and tasted — so good?
