As soon as there is a chill in the air, I long for the aroma of ginger, cinnamon or apple spices coming from the oven so to remedy that I baked a batch of muffins today.
A good muffin is the perfect partner with your midmorning or midafternoon coffee or with a cold glass of milk.
Making a light and tender muffin depends on stirring the batter just long enough to moisten the dry ingredients. Overmixing the batter makes for a tougher crumb.
