Boston Browned Potatoes

Serves about 8. Recipe is from “The Settlement Cookbook,” a cookbook first printed in 1901 as a volunteer project in Milwaukee, Wis., to help immigrants learn American customs and language. It contains many family recipes from the new Americans. Almost every Jewish home has a well-used copy of “The Settlement Cookbook.”

6 medium potatoes

4 tbls. melted butter

Salt

Pepper

Paprika

1. Peel and quarter potatoes. Place in a shallow baking dish with the melted butter. Coat potatoes and season well with salt, pepper and paprika.

2. Bake in a 400-degree oven for 30 to 45 minutes or add to roasting pan 1 hour before meat is done.
