Karma’s Easy Scones
Makes 16. Recipe is by Karma Patrick.
3 cups Krusteaz Buttermilk Pancake Mix
1/2 cup all-purpose flour
1/2 cup sugar
1/2 cup (1 stick) butter, chilled, cut into pieces
1/2 cup heavy cream
1/4 cup water
1 egg, slightly beaten
3/4 cup dried fruit, frozen blueberries, toffee chunks, white-chocolate chips, or just about any addition you can imagine
Coarse sugar (optional)
1. Preheat oven to 400 degrees. In medium bowl, stir together Krusteaz Buttermilk Pancake Mix, flour and sugar. Cut in butter with fork or pastry blender until mixture is crumbly.
2. Add cream, water, egg and fruit or other additive; stir until dough forms.
3. Transfer dough to floured surface and knead 8 to 10 times. Divide dough in half. With lightly floured hands, form each piece into an 8-inch circle, slightly domed in the center. Cut each circle into 8 wedges.
4. Place on lightly greased baking sheet. Sprinkle with coarse sugar, if desired. Bake 15 to 17 minutes or until lightly browned.
