Avocado and Mango Topper
Serves 6. Recipe provided by the Hass Avocado Board, which says this quick-and-easy dish is a perfect match for grilled chicken or fish.
1 ripe mango, peeled and diced
1 cup seeded, diced tomato
1/4 cup chopped fresh cilantro
2 tbls. chopped red onion
1 tbl. minced jalapeño pepper
1 tbl. lime juice
1/2 tsp. salt
1/4 tsp. ground black pepper
2 ripe Hass Avocados, peeled, pitted and diced
1. In a medium bowl, combine mango, tomato, cilantro, onion, jalapeño, lime juice, salt and pepper.
2. Add avocado and toss gently. Serve over grilled chicken or fish.
