Brussels Sprout Salad

Brussels Sprouts Salad
Serves 4. Recipe is by Corinne Cook.
About 15 medium or large Brussels sprouts
½ cup white raisins
1 apple, washed, cored and diced (peeled or unpeeled)
½ cup feta cheese
Tabasco Dressing
¼ cup vegetable oil
2 tbls. vinegar (tarragon, plain or rice)
2 tbls. sugar (or equal amount of sugar substitute)
½ tsp. salt
½ tsp. Tabasco sauce
1. Mix salad ingredients together.
2. Combine all ingredients for salad dressing. Shake well in jar. Pour desired amount over salad just before serving. You may have some leftover for another time.
Vinaigrette Dressing
½ cup olive oil
3 tbls. white wine vinegar
1 garlic clove, finely minced or pressed
½ tsp. Dijon mustard
Salt and freshly ground black pepper to taste
1. Combine oil, vinegar, garlic, mustard, salt and pepper in jar and shake until well mixed or, whisk ingredients together in bowl until well blended.
2. Pour desired amount over salad. You may have some leftover for another time.
