Broccoli, Date and Nut Salad
Serves 4. Recipe is by Corinne Cook.
6 tbls. olive oil
Juice of ½ lemon (you may have to add more)
1 tsp. honey
Pinch of salt
Pinch of black pepper
3 heads of fresh broccoli (about 3½ cups florets)
½ cup dates, sliced into ¼-inch pieces
½ medium red onion, quartered and thinly sliced
½ cup toasted pecans or walnuts
½ cup feta cheese, cubed or shaved Parmesan to taste
Salt and freshly ground black pepper to taste
1. Make salad dressing by whisking all ingredients together. Taste and correct with more lemon juice if necessary. Set aside.
2. In salad bowl, mix broccoli florets, dates, onion and toasted pecans or walnuts. Toss gently with a little salad dressing, then add cheese and lightly toss with a little more dressing.
3. Season salad with salt and pepper if desired.
