White Turkey Chili
Serves 8 or more. Recipe is by Beth Colvin.
2 tbls. olive oil
1 onion, chopped
2 tsps. minced garlic
32 oz. fat-free chicken broth
1 bay leaf
1 tbl. parsley
1/2 tsp. cumin
1/2 tsp. chili powder
Cayenne pepper, to taste
White pepper, to taste
2 (27-oz.) cans Creole cream style navy beans
2 cups chopped, cooked turkey
1 (4-oz.) can chopped green chilies
Salt, to taste
Sliced jalapeƱos, optional
Shredded cheese, optional
Sour cream, optional
1. In a large pot, heat olive oil on medium heat. Add the onion and garlic and cook until fragrant and soft.
2. Stir in the chicken broth, bay leaf, parsley, cumin, chili powder and peppers. Bring to a simmer, then add the beans, turkey and chilies.
3. Check the seasonings and salt as desired. Simmer 30 to 45 minutes. Serve garnished with jalapeƱos, cheese and sour cream.
