Sweet Potato Pie

Makes 1 (9-inch) pie. Recipe is from Eddie Warmack. This pie was a family favorite and often served at the end of a hearty meal at the farm.

5 small to medium sweet potatoes

1 (5-oz.) can evaporated milk

¼ cup brown sugar

½ cup white sugar

1 tsp. vanilla

1⁄ 8 tsp. salt

¼ tsp. cinnamon

¼ tsp. nutmeg

¼ tsp. cardamom

4 tbls. melted butter

4 eggs

1 (9-inch) pie crust

1. Wash and wrap sweet potatoes in aluminum foil and bake at 400 degrees for 50 minutes to 1 hour or until soft.

2. Peel sweet potatoes and combine all ingredients except eggs and crust in a mixing bowl, taste and adjust if desired.

3. Add eggs, mix and then pour into pie shell. Bake at 400 degrees for 50 minutes or until firm in center.
