Traveling leads to good finds. The Apple Barn is just one of those fun finds in the Smoky Mountain region of Sevierville, Tenn.

If you need an apple fix, this is the place to get it. Apple wines, apple cider, apple fritters, you name it. It also sells incredible apples by the peck, the half peck or by the pound. Yes, we did buy some to bring home.

Eat apples by themselves or add them to any number of recipes. They are exceptionally good with pork, but they also add a mild, yet sweet, dimension of flavor to poultry.

The long slow-cooking process is one of the best ways to soak in the flavor.

While I used a whole chicken for this recipe in order to stuff some of the apples into the chicken’s cavity, chicken pieces may also be used. If, however, you choose to use boneless, skinless chicken breasts or thighs, add 1⁄3 cup chicken broth to the recipe.
