Eat Your Vegetables: Black Bean Dip
Dip just right for game day
Along with football comes the search for good appetizers. Whether you’re tailgating or watching the game in your den, it’s nice to offer a plate of something yummy to family or friends. This is a recipe I received from Tommy Simmons.
While she was having “camp” at her home in Georgia for all her grandchildren, one of them asked what the appetizers for that night were going to be.
Frankly, she was surprised and amused that this would come from the 7-year-old.
She decided that her grandchildren are apparently given an appetizer to hold them until their parents, who have been working or running carpools, can put dinner on table. That night the spur-of-the-moment appetizer was cheese with apple slices.
By the end of the grandchildren’s stay and the night their parents were arriving, Simmons was more imaginative and presented this layered dip. Truthfully, she said the parents appreciated this one more than the young grandkids did. I think it will fit in perfectly with your recipes for football season.
You can make this ahead of time and have it ready and in the refrigerator for game day.
Remember to take it out of the refrigerator about 30 minutes before serving so that the cream cheese softens and is easy to scoop up with tortilla chips or crackers.
