Pumpkin Bread

Makes 2 loaves. Recipe is by Beth Colvin. This fall bread makes for a great gift to neighbors and friends.

1 (15-oz.) can pumpkin puré e

1 cup egg substitute or 4 eggs

1 cup canola oil

2⁄3 cup apple juice

3 cups sugar

31/2 cups flour

21/2 tsps. baking soda

1 tsp. salt

11/2 tsps. ground cinnamon

1 tsp. ground nutmeg

Dash of ground cloves

1. Preheat oven to 350 degrees. Spray two loaf pans with nonstick cooking spray and set aside.

2. In the bowl of a stand mixer, add pumpkin, eggs, oil, apple juice and sugar. Mix until well combined.

3. Sift together flour, baking soda, salt and spices. Add to pumpkin in three batches, mixing well between each addition.

4. Pour into loaf pans and bake for about an hour or until a toothpick inserted in the middle comes out clean.
