ADVOCATE-TESTED RECIPE

Veggie Bread

Serves 4 to 6. Recipe is by Julie Kay.

1 loaf French bread, cut into thick slices

1 (16-oz.) bag frozen spinach, partially thawed

1 (8-oz.) pkg. fresh mushrooms, sliced

1 small onion, chopped

1 (12-oz.) can evaporated milk

3 eggs

1 (8-oz.) pkg. shredded cheddar cheese

4 slices cooked bacon, crumbled

1. Spray slow cooker and place French bread slices into stoneware insert.

2. Top with partially thawed spinach, mushrooms, and onion.

3. Mix together evaporated milk and eggs. Pour over bread, spinach, mushrooms and onion.

4. Top with cheddar cheese.

5. Cook on Low for 4 hours. Remove from cooker and sprinkle crumbled bacon bits over all. Serve.
