Recipe is by Julie Kay.1 loaf French bread, cut into thick slices1 (16-oz.) bag frozen spinach, partially thawed1 (8-oz.) pkg. fresh mushrooms, sliced1 small onion, chopped1 (12-oz.) can evaporated milk3 eggs1 (8-oz.) pkg. shredded cheddar cheese4 slices cooked bacon, crumbled1. Spray slow cooker and place French bread slices into stoneware insert.2. Top with partially thawed spinach, mushrooms, and onion.3. Mix together evaporated milk and eggs. Pour over bread, spinach, mushrooms and onion.4. Top with cheddar cheese.5. Cook on Low for 4 hours. Remove from cooker and sprinkle crumbled bacon bits over all. Serve.
