Ever have breakfast for dinner? As a child, that seemed just plain weird, but now it feels like a treat.

Here’s a recipe for breakfast, brunch or dinner. How’s that for versatility?

The best part is there are lots of topping choices. French bread is at the bottom of the slow cooker. It will be topped with spinach, mushrooms, evaporated milk and cheese. When the dish is cooked, it will be garnished with crumbled bacon.

If you don’t like those choices, pick some you prefer.

It’s a good way to get vegetables and protein into the day’s nutrition. Serve with some fresh fruit, and it’s an easy dinner or brunch choice.

Be sure and spray the slow cooker first. It will cut down on cleanup. It might also be a good idea to use those slow-cooking bags that line the stoneware insert.

You can find them on the same grocery aisle as aluminum foil.

This will not take the traditional 6 to 8 hours. Check to see if it’s ready in about 4 hours.
